Also known as Tapioca Starch, popular in gluten-free cooking - particularly to improve the structure and texture of baked goods. It can also be used to thicken soups, sauces, pie fillings and gravies. It has a very mild sweet flavour. Arrowroot flour is sometimes labelled as Tapioca flour and they are interchangeable in most instances.
