Yellow corn (maize) is coarsely stone-milled into a gritty-textured meal, bran and flour then sifted out. Polenta is very quick to cook and is naturally free from gluten. Good accompaniment to rich toppings such as meat and mushroom sauces; vegetables, beans and cheeses can also be mixed through in cooking.
